Gluten-Free Chocolate-Chip Angel Food Cake (Variation): A wonderfully light and spongy Angle Food featuring accents of Almond, Chocolate Chip, and a hint of Orange.
This is a simple VARIATION to the Gluten-Free Angel Food Cake recipe that appears on Page 68 in our Gluten-Free and Wheat-Free Gourmet Desserts book.
The angel food cake retains the wonderful sponginess and light texture of the original, while introducing some new flavors – in particular: chocolate, almond, and orange. The recipe remains dairy-free too, just like the original.

REDUCE Vanilla to 1 Teaspoon
REPLACE Lemon Juice with Orange Juice
ADD 1 Teaspoon Almond Flavor (Alcohol-Free)
ADD ¾ Cups Chocolate Chips
At the point in the original recipe where we added vanilla, lemon juice and zest, instead add almond flavoring, vanilla and orange juice; mix.
At the point in original recipe where batter mixture is leveled in the pan, now you will also sprinkle the chocolate chips over the leveled batter before breaking up air-bubbles and baking. Bake time should remain similar to original, at 55-60 minutes. Cake may or may not pull away slightly from the pan as it nears completion baking.
