Garrett and I make this at home–a homemade version of Olive Garden’s Zuppa Toscana. It is absolutely delicious! We cut the potatoes into thin rounds, use TONS of kale, and add bacon in with the italian sausage. I think some recipes call for heavy cream or half-and-half, but they’re so rich that we’ve decided even skim milk would taste good. A perfect winter soup (and better than Olive Garden’s)!
