Zucchini Parmesan Crisps в–  2 zucchini or squash sliced 1/4in. в– 1/3 cup shredded parmesan в– 1/3 cup breadcrumbs в– 1 tsp olive oil в– 1/4 tsp salt в– dash black pepper Line baking sheets with foil, spray lightly with cooking spray. Toss rounds with oil. In a bowl or plate, mix breadcrumbs, parmesan, salt and pepper. Coat zuccinni w/breadcrumb mixture, pressing to adhere. Place rounds on baking sheets. Bake @ 400* / 22 to 27 minutes, until golden brown. DO NOT flip during baking.
