Strawberry mousse
Strawberry Mushroom Products:
- 250 g fresh strawberries
- 50 g of powdered sugar
- 3 + 2 tablespoons Orange juice
- 200 g sour cream
- 100 ml of cream 30%
- 10 g of gelatin powder
- 3 tablespoons cold water
Strawberry jelly:
- 200 g fresh strawberries
- 2 tablespoons powdered sugar
- 1 tablespoon Orange juice
- 1 tablespoon dissolved gelatin) of the total amount
White chocolate mousse:
- 150 g white chocolate
- 250 ml of cream 30%
- For decoration:
- 50 g of grated white chocolate
- some fresh strawberries
Method of preparation:
- Soak gelatin in 3 tablespoons. cold water.
- Let it swell for 10-15 minutes.
- Clean and wash strawberries for mousse.
- Add sugar and orange juice, grate.
- Precipitate the puree through a sieve to remove the seeds.
- Add 2 tablespoons to the gelatin. Orange juice.
- Heat on low heat and stir until it dissolves.
- Pass all the strawberry jelly products, strain through the sieve.
- Cool slightly gelatin, add 1 tablespoon. from it to the fruit puree.
- Add to the puree a spoonful of sour cream.
- Stir well to a smooth, homogeneous mixture.
- Add the remaining gelatin, mix.
- Beat the cream to the soft tops, add it.
- Divide the mousse into 4 cups and cool until it becomes jelly.
- Apply the fruit puree on it.
- Cool the mixture again until it becomes jelly.
- In the water bath, melt chocolate, cool it to about 30 degrees.
- Beat the cream to very soft tops.
- Add it carefully to the chocolate, stir.
- Divide between glasses and cool for 2-3 hours.
- Decorate with grated white chocolate and fresh strawberries.
